I have three potted Elderberry bushes that were about three feet high the deer trunk them down to almost nothing at the end of August can I expect that they will die or will they grow back in Spring?
 
Deers love elderberry!
Your plants should sprout at the soil level around the trunk! If they do come back come spring you will need to protect them from deer, or the same thing will happen again.
Are you planning on planting them in the ground?
Do you have a sheltered area that you can fence in?
You could also just use fencing around the plants so the deer cannot reach them and high enough so they cannot jump over the fence.
