Healthy Pink Pitaya Blender Pancakes


Valentine’s Day falls on a Sunday this year, so pink pitaya pancakes for breakfast it is! They are healthy, light, fluffy and easily made in the blender!

Made with oat flour and colored with pitaya powder, these pancakes are the perfect way to start your day and share the love with your family!

We are pretty much obsessed with pancakes in our house. They are a Saturday morning tradition. Cade makes breakfast with the kids almost every Saturday. Usually it’s our melt in your mouth buttermilk pancakes, but occasionally we bust out a new recipe like this one.

The true story behind these pancakes is that I was googling natural food products that would make food pink that wasn’t food coloring (because my youngest has developed issues with dye), and I found pitaya powder. I was so intrigued. I added it to my grocery list and headed down the road to Harmon’s.

Most of the recipes I found used it in smoothies or yogurt bowls, and I thought, why not in pancakes? Thus, the pink pitaya pancake was born! Now it’s time for you to enjoy them too! Happy Valentine’s Day everyone!

What is Pitaya?


Pitaya is a super fruit, also known as dragon fruit. It is high in fiber, vitamin C, and rich in antioxidants, probiotics and omega fatty acids. I’m finding those antioxidants and probiotics are so important for us 30+ people. So this powder is a great way to get those into my diet. The flavor is mild and it mostly just acts as a mild sweetener.

Ingredients Needed for Pitaya Pancakes


This is your grocery list:

  • Oats
  • Baking Powder
  • Baking Soda
  • Salt
  • Pitaya Powder (found in the organic section of the grocery store or at a health food store)
  • Eggs
  • Banana
  • Milk
  • Swerve Sweetener (or honey or sugar)
  • Cottage Cheese (low fat)

How to Make Pitaya Pancakes


Get ready for a super easy pancake recipe! The batter takes about 5 minutes to make, then rests for 5 minutes, and then just a few minutes to cook. Easy peezy!

  1. Start by making oat flour by blending the oats until they are a fine powder.
  2. Add all the remaining ingredients and blend until smooth.
  3. Let the batter rest for 5 minutes.
  4. Heat a skillet or griddle over medium heat and spray with cooking spray if needed.
  5. Pour into circles and cook until bubbles appear on the top and pop.
  6. Flip the pancakes and let them cook for another 1-2 minutes on that side.
  7. Remove them from the griddle and enjoy!
You can serve them with your favorite syrup or a white chocolate drizzle like the one showed in these photos. We just melted white chocolate and just dyed it pink for the photos.

Some of our favorite syrups are: buttermilk syrup, coconut buttermilk syrup, meyer lemon syrup, peanut butter maple syrup, or marionberry syrup.

Can Pancakes Be Reheated?


Pancakes can be reheated in the microwave or covered with foil in a 350 degree oven.

Can You Freeze Pancakes?


Cool completely, freeze in a single layer on a cookie sheet, then transfer to a heavy duty freezer bag and freeze for up to 3 months.



Valentine’s Day, Mother’s Day, baby shower, bridal shower, Breast Cancer Awareness month, or just a random Saturday…they all call for pink pitaya pancakes! They are healthy, fluffy and totally irresistible!

  • 2 Cups Oats
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 1/2 teaspoons Pitaya powder
  • 2 Eggs
  • 1/2 Banana
  • 1 1/4 Cups Milk whole milk is best in this recipe
  • 2 Tablespoons swerve sweetener (honey or sugar can be used)
  • 1 Tablespoon Cottage Cheese low fat

Instructions

  • Place oats in a blender and blend until a smooth flour is formed.
  • Add all remaining ingredients and blend until smooth.
  • Set aside to rest for 5 minutes.
  • Heat a skillet to medium heat and spray with nonstick spray. Pour batter into circles and cook until bubbles form and pop. Flip and continue to cook for 1-2 minutes or until set.
  • Remove and enjoy with syrup or a white chocolate drizzle (we dyed ours pink! (just white chocolate melted with pink food coloring!)
