Pasta Sauce

2 tsp. olive oil
1 medium onion, finely chopped
6 cloves garlic, minced
7 or 8 cups fresh toamtoes, peeled,and diced
2 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. dries thyme
1 tsp. salt
1/2 tsp. pepper
1 Tblsp. sugar or 3 Splenda packets
2 Tblsp. fresh parsley, chopped fine

Heat the oil in a large sauce pan, over medium heat. Add onion and garlic. Saute' until onions are translucent and soft. Combine the rest of the ingredients. Bring to a boil; reduce heat to simmer for 1 to 3 hours. Add the parsely at the end. Depending on the type of sauce you want. It can be chunky if you like. Makes 3 to 4 quarts.

Sometimes I use a hand blender to puree' the sauce.
