Hi welcome to the site.
I think I would start with herbs, that way you can keep them pinched back and they will still keep going.

I didn't see the other post you made before I answered.
I would grow the type of herbs that you want to use. If you hate thyme then I would not plant it.
I start most of my own herbs for indoor use. They are pretty easy to start and grow.
Do you have a good kitchen window?? Most herbs need light.

I have moved a lot of my herbs from the allotment to my window planters.
They seem to last a lot longer at the end of the season :)
