The recipe I have been using for pickled beets is a simple on too --but I like the sound of the one you have Randy. Sounds like it might have a little more kick to it.

LOL Shine---------oddly enough it was a Campbell's soup! Their vegtable beef (chunky).
I just emailed them to let them know. I'm sure it was a mistake that it got in there-but it sure was gross!!!!!

1/2 c.green peppers
1/2 c.red peppers ( I usually use all green peppers--dont really care for red peppers)
